Monday Meals: Berry Green Tea Gummies

Hillary and I have recently developed an obsession with homemade gummies and jello. And the good news is they are six week nutrition challenge approved! Do not expect the traditional, sugary candy. These gelatin snacks are very light and mildly flavored, but I find the subtle sweetness very pleasant and refreshing.

Why eat gelatin?

Gelatin is derived from collagen, from the super-nutritious bones, hides and connective tissues of animals.

  • A complete source of protein, containing 18 amino acids including glycine and proline.
  • Supports skin, hair and nail growth
  • Good for joints and can help joint recovery
  • Can help tighten loose skin
  • Can improve digestion since it naturally binds to water and helps food move more easily though the digestive track

It is important to make sure you are buying a good quality gelatin such as Great Lakes or Vital Proteins. Kraft Jello doesn’t count!

I love these green tea, raspberry and cherry gummies, but experiment with different fruits and teas! Kombucha works great too! The recipe below is for a firmer ‘gummy.’ For ‘jello’, use less gelatin and set in a bowl or dish, rather than silicone molds. Here is some more recipes for inspiration:

Ingredients

4 tbsp gelatin (I use Great Lakes)

1 green teabag

1/2 cup raspberries

1/2 cup cherries

Method

  1. Place teabag in a small saucepan with 1 cup of boiling water and allow to steep for 5 minutes. Remove teabag.
  2. Take 1/4 cup of the tea and place in a small bowl or cup and sprinkle in gelatin. Allow to sit for 1 minute.
  3. Puree raspberries and cherries in a blender or food processor.
  4. Add cherries and raspberries to saucepan and warm over low heat.
  5. Add the gelatin and whisk with a fork until completely dissolved.
  6. Carefully pour into silicone molds.
  7. Refrigerate for at least 1 hour, then pop gummies out of molds and store in an airtight container in the fridge.
